Sylvia’s winemaking approach is rooted in gentle extraction and meticulous craftsmanship, ensuring that each wine expresses the full depth of its terroir. A modern Diemme basket press, ideal for her style, enables whole-bunch pressing with minimal intervention. Operating at a low pressing rate, it preserves structure and purity, allowing the wines to develop their signature powerful body, crisp acidity, and bone-dry finesse.
Her Rieslings are deliberately restrained—minimal oxygen exposure tempers primary fruit characteristics, resulting in wines that are lean, structured, and remarkably long on the palate. Aging on full yeast for several months enhances texture, while filtration remains minimal to maintain integrity.
Each vineyard plot is harvested, fermented, and aged separately to highlight its distinct personality. A portion of the Red Riesling undergoes skin-on-skin fermentation, where destemmed grapes ferment openly like a red wine. As the Red Riesling ripens, its delicate red skin imparts a rosé-like hue, creating a must reminiscent of a Provençal
rosé within days.
Sylvia carefully blends individual batches with precision, crafting wines that embody her avant-garde Rheingau style. Before bottling, a low-dose sulfurization ensures stability without compromising expression.
