Charissé Winery cultivates two small but prestigious vineyard plots in Winkel, totalling 0.3 hectares. Sylvia follows organic farming principles, though the winery has yet to receive certification.
- Jesuitengarten: Planted by Sylvia’s grandfather in 1981, this vineyard produces classic Riesling.
- Hasensprung: Home to Red Riesling, planted in 2008.
Every task in the vineyard is done by hand, from pruning to harvest. The biological pest control is outsourced to a specialized contractor, but besides of that Sylvia, with the occasional help of family and friends, takes care of most vineyard operations herself.
